New Business Mobilisation Support Audit & Pre‑Management Audits

Taking on a new site can be daunting. We can carry out mobilisation audits shortly after handover to coach and support managers in ensuring everything is available and in place with regards to food and safety. A comprehensive action plan will act as a checklist to implementing robust management systems that stick.

What we focus on

HACCP in practice

We track dishes from the door to the table and match the steps to your HACCP plan. We look at chilled deliveries and how well stock is managed to maintain safe temperatures. We check how raw and ready-to-eat items are separated in storage.

We watch cooking, cooling, reheating and hot holding in real-time. We test probe accuracy and see how temperatures are taken, recorded and acted on.
Allergen control

From supplier data to the table

We review supplier specs, recipes and allergen matrices. Then we stand at the pass and listen to how allergen information is communicated and how well questions are handled when tickets stack up.

If a dish can be adapted, we check that the kitchen and front of house describe the change in the same way and that the till, app or allergen records matches what the team says. We provide support in providing clear messaging to guests in regards to allergen information.

Cleaning, structure and pests

Standards that survive the rush

We check the cleaning schedule is being actively completed. We look at chemical storage, labelling and dilution. We check that high-risk touch points are sanitised when they should be, not only when someone remembers. We look under and behind equipment at seals, finishes and drainage.

If the structure is fighting you, we flag fixes that make good hygiene the easy option. Where there are challenges around pest management, we coach and advise on actions in priority order and quick fixes.
